Al Faham Chicken Recipe | Arabian Grilled Chicken Recipe

Al Faham Chicken Recipe or Arabian Grilled Chicken is a popular recipe from the Middle East widely available in restaurants in India too.

Al Faham Chicken

Al faham chicken is prepared with whole chicken cut into four pieces. The chicken is washed and pat dried and marinated with Arabian spice mix for few hours.

The marinated chicken pieces are then charcoal grilled in most of the restaurants but while making at home you can do it on a grill pan or in the oven.

Al faham chicken is one of my favorite chicken grilled recipes.

  • 1 whole chicken with skin
  • 1 medium size onion
  • 2 green chillies
  • 1 small tomato
  • 100 ml hung curd
  • 2 teaspoon ginger garlic paste
  • 1 teaspoon pepper powder
  • 1/2 teaspoon Arabic spice powder (recipe below)
  • 1 lemon juice
  • salt as required
  • 1 teaspoon olive oil

Ingredients for the Arabic spice powder (makes around 1 cup):

  • 6 tablespoons cumin seeds
  • 6 tablespoons fennel seeds
  • 6 tablespoons whole coriander seeds
  • 3 tablespoons whole peppercorns
  • 3 1 inch cinnamon sticks
  • 5-6 dried red chillies
  • 1 tablespoon turmeric powder


Dry roast all the spices except turmeric powder on low flame for 8-10 minutes. Cool and crush to a fine powder, add turmeric powder and mix. Store in an airtight container and use as and when required.

Directions for making al faham chicken recipe:

1. Wash the whole chicken and cut into four pieces. Make insertions all through

2. Grind onion, green chillies and tomato to a smooth paste.

3. To the above paste, add hung curd, ginger garlic paste, pepper powder, arabic spice powder, lemon juice, salt and olive oil. Mix well.

4. Coat the chicken pieces well with this marinade and keep for 3-4 hours in the fridge.

5. After 4 hours remove from the fridge and bring to room temperature.

6. Place the marinated chicken on a foiled tray and bake in a preheated oven at 200C for 30 minutes. Change the oven settings to broil and cook for 1 minute. Remove.

7. Alternatively, you can heat a grill pan and smear some oil on it. Place the marinated chicken pieces and grill on one side on medium flame  for about 5-7 minutes. Flip and repeat the same process for the other side too.

8. Serve hot with khubz or roomali roti or kabsa rice along with garlic sauce, onion rings and wedges of lemon.


  • If you do not have Arabic spice powder you can replace it with garam masala powder too.
