Phirni Recipe | How to Make Punjabi Phirni

Phirni is a creamy Indian dessert recipe made with ground basmati rice, full cream milk and sugar.

Phirni is a popular north Indian dessert recipe especially in the state of Punjab.

It is traditionally served in earthenware bowls also known as matkis, garnished with chopped nuts and silver leaf. It is one of the easiest desserts you can make anytime.

You can also add a pinch of cardamom powder, but since I don't like the flavor of cardamom, I've not used in this recipe.

Phirni Recipe

  • 5 tablespoons long grained basmati rice
  • 1 litre full cream milk
  • 4-5 tablespoons sugar
  • few strands of saffron soaked in 1 teaspoon milk
  • chopped nuts for garnishing, I have used pistachios

Directions for making phirni recipe:

1. Wash and soak the basmati rice in water for an hour. Then drain the water and wash again and let it dry for sometimes.

2. Grind the basmati rice to a coarse paste. Add 1/2 cup of milk to it, mix well and keep aside.

3. Boil the remaining milk and add in the rice paste. Cook for 15-20 minutes while stirring continuously, so that no lumps are formed.

4. Add sugar and saffron milk mixture, stir and simmer for few more minutes till the sugar is fully dissolved.

5. Pour into earthenware or china bowls and keep aside to cool. Refrigerate at least for an hour.

6. Garnish the phirni with chopped nuts of your choice and serve chilled.
